RECIPE: Spiced Chicken + Homemade Wedge Fries

Here's what you'll need...


  • 4 bone-in skin-on chicken thighs
  • 3 sprigs of thyme
  • 4 garlic cloves
  • 1 teaspoon sweet smoked paprika
  • Extra virgin olive oil
  • 1 large red onions
  • A handful of ripe mixed-colour tomatoes
  • 3 fresh mixed-colour jalapenos
  • Micro Greens by Nutrigreens, grown in Abbotsford, BC

Homemade Wedge Fries

  • 2 large russet potatoes
  • 1 teaspoon sweet smoked paprika
  • Extra virgin olive oil
  • Salt & pepper

Here's what you'll do...

  1. Pick the thyme leaves into a pestle and mortar, peel and add 1 garlic clove, then add paprika and sea salt. Bash until a smooth paste and then add 2 tablespoons of o olive oil.
  2. Rub marinade over chicken thighs, don't be gentle as you want to get it into all the nooks and crannies. Cover and place in fridge to marinate for at least 2 hours.
  3. When ready to cook chicken, preheat oven to 350F. Place a large griddle pan over high heat.
  4. Quarter unpeeled onions and split grape tomatoes, then place in the pan with sliced up jalapenos and remaining unpeeled garlic cloves. Grill for 5 to 10 minutes, or until charred all over, turning regularly.
  5. Remove garlic and onion skins, then add all of the veggies to your food processor with a good amount of olive oil. Season with salt and pepper.
  6. Return to the hot pan, add marinated chicken and sear all over for 8 to 10 minutes, turning regularly. Transfer to a roasting tray, pop in the hot oven for 25 minutes.
  7. Meanwhile, cut the russet potatoes into roughly 1 inch wide slices. Toss in a bowl with paprika, a lug of olive oil and salt & pepper.
  8. Spread the wedges out on a baking tray and place in the oven for 25 minutes or until tender & crisp.
  9. Serve the roasted chicken thighs with your spicy sauce on top and sprinkle your microgreens on top of the sauce for presentation. Add your homemade potato wedges on the side.
  10. Finally, enjoy!
